LAMB
KORMA
Ingredients
1lb lamb, trimmed and cubed
1 onion
2oz ghee
1 tablespoon cumin
1 teaspoon coriander
1/2 teaspoon turmeric
1/2 teaspoon ginger
1/2 teaspoon fenugreek
2 cardamoms, crushed
1-2 teaspoon hot chilli powder
11/2 tablespoon coconut
1 tablespoon sugar
5 fl oz single cream
small tin evaporated milk
salt & pepper, to taste
Method
Fry lamb, onions and spice in ghee. Add coconut and
sugar mix together.
Add cream and serve to taste. Simmer until lamb is ready and cream
thickens approx for 30 minutes or until lamb is tender. Serve with
rice and nan bread.
