PULLAO
RICE
Ingredients
2oz butter
4 whole cardamon pods
1 stick of cinnamon
1 teaspoon ground turmeric
1oz seedless grapes
8oz long grain rice
1 teaspoon salt
1/2 blanched almonds, flaked
Method
Heat the butter in a pan, stir in the spices
fry for 1 minute. Add the raisins and rice and stir fry for 3 minutes.
Stir in 1 pint water and the salt, bring to the boil and stir. Lower
the heat to simmer, cover and cook to the rice is cooked, stir in
the almonds.
