SHERBETS
MANGO SHERBET
Ingredients
3 ripe mangoes, halved
pinch of salt
juice of lemon
11/2 oz cater sugar
crushed ice
Method
Squeeze the mango pulp into a bowl, add 2 pints water
and mix. Add salt, lemon and sugar and dissolve.
Serve chilled over crushed ice, garnished with a slice of lemon.
YOGHURT SHERBET
Ingredients
1/2 pint natural yoghurt
pinch of salt
2oz caster sugar
ice cubes
lemon rind
dash of ground nutmeg
Method
Beat together yoghurt, salt and sugar. Add 2 pints
water and mix. Serve in tall glasses over ice, sprinkled with lemon
rind and nutmeg.
